Dal makhani is a Punjabi dish of whole black lentils (urad) cooked with a handful of kidney beans. The pulses are soaked, boiled until completely soft, then held over low heat for hours with tomato, ginger, garlic and butter. The long cooking is the point: the lentils break down just enough to thicken their own liquid, so the dal turns glossy and creamy without needing much cream at all.
The flavour is deep and mellow rather than sharp — earthy from the black lentils, round from the butter, with a slow warmth from the whole spices. It is usually eaten with naan, kulcha or plain rice, and a spoonful of it makes almost any plate feel complete. It is a natural partner to samosa chaat to start and to chilli paneer if the table wants something sharper alongside.
