Spiced chickpea curry with puffed fried bread

Chole bhature is one of the defining plates of Punjabi cooking. The chole are chickpeas cooked down with onion, tomato, ginger and a dark, tea-tinged spice blend until the gravy thickens and clings to them. The bhature are made from a soft leavened dough that is rested, rolled and slipped into hot oil, where it balloons in seconds into a light, hollow bread with a crisp surface.
It is meant to be eaten with your hands: tear the bhatura, scoop the chickpeas, and cut through the richness with the raw onion, pickle and lemon served alongside. Two breads and a bowl of chole make a substantial plate, so it is usually a late breakfast or a long lunch rather than a quick bite. For a lighter start, aloo parantha covers the same breakfast ground, while pav bhaji is the equivalent bread-and-curry plate from Mumbai.
