Aloo parantha is a whole wheat flatbread stuffed with spiced potato and griddled until golden. It is on the breakfast menu at Cafe Junoon, a 100% vegetarian Indian cafe in Cornerstone, Northeast Calgary, for dine-in, takeout and delivery.
Aloo parantha is the standard North Indian breakfast bread. Boiled potato is mashed and seasoned with green chilli, ginger, coriander, ajwain and salt, then sealed inside a ball of whole wheat dough. The parcel is rolled out flat and cooked on a hot tawa, turned repeatedly and finished with butter or ghee until both sides are freckled and golden.
The bread stays soft and a little chewy with a crisp surface, and the filling keeps it moist all the way through. It is traditionally eaten with yogurt, pickle and butter rather than a curry, which is what makes it such an easy morning plate. If you want breakfast with more on the plate, chole bhature is the bigger Punjabi option, and the Junoon Thali turns it into a full meal.
