Crushed samosa with yogurt, chutneys and onion
Samosa chaat is a samosa broken open and topped with yogurt, chutneys, onion and coriander. It comes from the Chatori Gali chaat counter at Cafe Junoon, a 100% vegetarian Indian cafe in Cornerstone, Northeast Calgary.
Samosa chaat turns a samosa into a plate. The samosa — a pastry shell filled with spiced potato and peas, folded into a triangle and fried until crisp — is pressed open in a bowl, then built on: whisked yogurt, sweet tamarind chutney, green coriander and mint chutney, chopped onion, fresh coriander and a dusting of chaat masala.
What makes chaat work is the collision of textures and tastes in one spoonful: the pastry still crisp at the edges and soft where the chutney has soaked in, cool yogurt against tangy tamarind, and the savoury potato underneath. It is eaten straight away rather than saved for later. From the same counter, pani puri is the lighter, sharper option, while aloo parantha is the calmer breakfast version of the same potato-and-spice pairing.
