Amritsari nutri kulcha is a Punjabi street-food plate: a soft leavened kulcha bread served with a protein-rich soya nutri curry, onions and tangy chutney. It is made fresh at Cafe Junoon, a 100% vegetarian Indian cafe in Cornerstone, Northeast Calgary.
Amritsari nutri kulcha takes its name from Amritsar, where it is sold from carts and small stalls as a filling everyday plate. The kulcha is a soft leavened flatbread, rolled out and cooked on a hot griddle or tandoor until it blisters, then brushed with butter. Alongside it goes nutri — soya chunks simmered in an onion and tomato masala until they soak up the gravy and turn meaty in texture while staying entirely plant-based.
On the plate it is usually finished with sliced onion, a squeeze of lemon and a chutney, so each mouthful moves between soft bread, savoury curry and something sharp and fresh. It eats as a complete small meal rather than a side, which is why it sits in our Mini Meals section.
