Chilli paneer belongs to Indo-Chinese cooking — the style that grew out of Chinese kitchens in Kolkata and now has its own shelf in every Indian cafe. Cubes of paneer are lightly coated and fried, then tossed at high heat in a wok with onion, capsicum, garlic, ginger, green chilli and a soy and chilli sauce that is finished sweet, sharp and glossy.
It arrives hot, with the paneer crisp at the corners and soft inside, the peppers still with some snap, and a sauce that coats rather than pools. It can be served dry as a starter to pick at, or with a little more gravy to eat with noodles or rice. Alongside it, dal makhani gives the table something mellow, and aloo parantha is a comforting way to start the same day.
